Makes: 12 cupcakes
1⁄2 cup (100 g) unsalted butter, , softened
2⁄3 cup (150 g) sugar (if you like your cupcakes very sweet, add a little more)
10 g vanilla sugar or 1 teaspoon vanilla extract (optional)
1⁄4 teaspoon salt
1 teaspoons baking powder
1 1/3 cups (200 g) flour
1/2 cup (120 mL) milk
For chocolate cupcakes (6 cupcakes):
1 tablespoon cocoa powder
1 tablespoon milk
100 mL heavy whipping cream
50 g powdered sugar
200 g mascarpone cheese
For chocolate hearts:
1. Vanilla Cupcakes (6 vanilla cupcakes + 6 vanilla-chocolate cupcakes)
Preheat the oven to 330 F/165 C. In a medium bowl, cream together the sugar, and butter. Beat in the eggs, then stir in the vanilla.
Add baking powder, salt, flour and milk. Add flour and milk
gradually! Mix until smooth.
Spoon mixture into the prepared tin. Fill muffin cups 2/3-full (6 cups). Bake in a preheated oven to 330 F/165 C for 20-25 minutes or until the cupcakes are light golden. Using a toothpick inserted in the center to test for doneness.
For chocolate cupcakes: Add 1 tablespoon cocoa powder and 1 tablespoon of milk. Fill muffin cups 2/3-full (6 cups).
2. Mascarpone Whipped Cream Frosting
Using an electric mixer, beat whipping cream until the mixture starts to thicken. While continuing to beat, gradually add sugar and mascarpone cheese. Keep beating until mixture is fairly stiff. Chill until ready to use.
3. Chocolate Heart

Spoon melted chocolate into a disposable icing bag, a sandwhich bag (you’ll snip a tiny hole in one of the corners) or a squeeze bottle. Just about anything that is easy to handle and has a small tip.
