Pies with Cheese

Ingredients

300 gr. all purpose flour

300 gr. self-raising flour

1 cup sunflower oil

½ a yogurt bowl

½ cup white wine

1 teaspoon salt

1 teaspoon sugar

½ cup margarine

2 tablespoonfuls vinegar

1 sachet yeast

For the filling

250 – 300 gr. feta cheese
2 eggs
A little pepper

Procedure

Place all the ingredients in the bowl of your food processor, except the salt. Use the hook attachment and mix the ingredients. Then add the salt and continue mixing for about 5 minutes. You will have a nice, soft dough. Take it out of the bowl, place it in a plastic bag and leave it in the fridge while you prepare the filling.

I should mention that you don’t have to use the dough all at once. Cut off the amount you need, flatten the rest in a plastic bag and place in the freezer. When you wish to make pies, just defrost and use it as needed.

Prepare the filling by breaking up the feta cheese with a fork. Lightly beat the eggs with a fork. Add about ¾ of the eggs to the cheese. Keep the rest to brush on top of the pies. Mix well the egg with the cheese and a little pepper if you wish.

Take a piece of dough and roll it out quite thin. With a cup, a bowl or a coupe-pat as a guide cut rounds of the dough. Depending on the size of the rounds, place a teaspoon of filling or more in the centre. Fold over the dough and press the two sides together. You can either press the open side with the tongs of a fork, or you can fold over the side so that the filling stays in during baking.

Lightly oil a baking sheet and place in the small cheese pies as you finish them. When the sheet is full, brush the tops with the beaten egg after you add a tablespoonful of water. Bake them in a preheated oven at 180oC for about 15 – 20 minutes, until they are golden brown.
